Puffed Wild Rice Treats
- 1 Tbsps. butter
- 4 cups jet-puffed marshmallows
- 6 cups dried cooked wild rice
You will need:
A sieveOil
Bowl/plate lined with paper towel
13x9x2 inch pan
Heat the oil (2inch high) in a medium pan for about 5 minutes. Test with 1 grain if it puffed up right away then it is ready. Make sure to keep the heat on medium.
Put enough rice that should fit in the palm of your hand into the sieve. Shake the sieve until the rice puffed up or expands and you can see the white of the rice.
Frying the rice will only take 5 seconds for all of it to puffed up. Empty the sieve into the bowl or plate lined with paper towel.
In a microwave-safe bowl heat butter and marshmallows on high for 3 minutes, stirring after 2 minutes. Stir until smooth.
Add bath wild rice stir until well coated.
Using buttered spatula or wax paper evenly press mixture into 13x9x2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.
Note:
Frying the wild rice for more than 5 seconds will turn burnt it.
Use fresh marshmallows.
You can add color to your melted marshmallow by putting food color when it is melted, and you start stirring it.
Brush butter inside the bowl before you place the marshmallow in and into the microwave.
